Nisin is a polypeptide antibacterial substance extracted from the fermentation product of Lactococcus lactis (L. lactis), and has been approved as a food preservative in many countries around the world.
Nisin E234, also known as nisin, is a polypeptide substance with antibacterial activity extracted from the fermentation product of lactococcus (Lactococcus lactis subsp. lactis) through modern biotechnology. It is composed of 34 amino acid residues. After consumption, it is quickly hydrolyzed into amino acids under the physiological pH conditions of the human body and the action of α-chymotrypsin.
