Natamycin E235 (Pimaricin) is a white to yellow crystalline, tasteless and odorless powder. Its crystalline form is stable. Natamycin has very low solubility in water and most organic solvents. The low solubility in water makes it very suitable for use on food surfaces. Natamycin stays on the surface of food where most molds and yeasts may grow but does not affect the natural fermentation process inside. Natamycin is stable over a wide pH range (3-9). Since the pH of most foods is between pH 4 and pH 7, Natamycin is a widely used food preservative to prevent the presence of yeasts and molds in foods.
Natamycin E235 (Pimaricin) is an antifungal preservative which has broad and effective action. It not only inhibits the growth of different molds and yeasts, but also inhibits the production of their toxin. Commercial Natamycin usually contains 50% of the active substance like Natamycin 50% in Glucose, Natamycin 50% in NaCl, Natamycin 50% in Lactose, Natamycin 95%.
Natamycin can effectively inhibit the growth of a variety of molds and yeasts and has a broad antifungal spectrum, It not only inhibits fungi, but also prevents the production of mycotoxins.
Natamycin is insoluble in water and ethanol. It is usually added by surface spraying, so it is extremely difficult to be absorbed by the human body. Natamycin is harmless to the human body and is the only approved antifungal biological preservative in the world.
Natamycin is extremely sensitive to fungi and can be effective even with a trace amount. Its inhibitory effect is about 50 times stronger than potassium sorbate. It does not change the flavor of food.
