Description

ε-polylysine is a polypeptide with antibacterial effect produced by fermentation of white streptococci. It is a natural, safe and healthy antibacterial food preservative. It has obvious inhibitory effects on Gram-positive bacteria, Gram-negative bacteria and yeast, etc., and can be used as a preservative in fruits and vegetables, beans, rice and products, wheat flour and products, grain products, meat products, condiments, beverages, cosmetics and daily chemical products.


Compared with artificial synthetic chemical preservatives (benzoic acid, sodium benzoate, sorbic acid, potassium sorbate, calcium propionate, etc.), natural preservatives such as ε-polylysine are safe, and its monomer is one of the eight most common amino acids in the human body. It has advantages that synthetic preservatives cannot match, such as strong antibacterial properties, safety and non-toxicity, good water solubility, good thermal stability, and a wide range of effects.
